WIN A COOKBOOK!



I know....I have neglected this blog terribly...Shame on me!
But with my favorite season "FALL' approaching I thought it was time to kick it in gear.

I have a brand new cookbook for the first 5 people that post their "Favorite Fall Recipe" on the blog.

Hurry...there are only 5 cookbooks and I bet they will go fast!!

  1. Sharon Starlings Autumn Quiche

    Here is my tried and true quiche recipe. It is so easy to make ahead. I make this all the time, I cook the meat, and after it cools I just mix all the ingredients together and put it in the fridge. Then in the morning I pour it into the pi crusts and bake. Or you can bake the nihght before and rewarm that morning-They reheat well too.
    QUICHE RECIPE (already doubled)

    1 CUP MAYONAISE
    4 TBSP FLOUR
    4 EGGS BEATEN
    1 CUP MILK
    BACON or SASAUGE
    CHEESE
    GREEN ONIONS or SPINACH

    TWO STORE BOUGHT PIE CRUST

    MIX TOGETHER DIVIDE INTO EACH PIE CRUST BAKE AT 350 DEGREES FOR 40-45 MINUTES MAKES 2 QUICHE

  2. This has always been a hit with guests.

    ZUCCHINI CASSEROLE

    Heat oven 350 degrees

    4 zucchini - grated
    4 T butter
    1 onion - chopped
    2 T flour
    Garlic salt
    3 - 4 T milk
    1 ½ C Sour Cream
    2 eggs - beaten
    2 C grated Colby cheese
    Breadcrumbs & grated parmesan cheese

    Grate zucchini into colander - sprinkle with salt - let drain 2 hours.
    Press out all moisture (I pressed it between paper towels)

    Melt butter in large frying pan, sauté onion, add zucchini and sauté for 3 min.
    Add flour and milk and cook 3 minutes. Take off heat, stir in sour cream, cheese,
    Eggs and garlic salt.

    Put in a greased casserole (9x13)
    Top with bread crumbs and parmesan cheese
    Bake at 350 degrees for 1 hour.

    (Can be made a day ahead and bake it the day of use)

    Swedish Nuts


    1 lb nuts (pecans work best but you can use walnuts or blanched almonds)
    1 cup sugar
    Pinch of salt
    2 egg whites
    ½ cup butter
    Toast nuts in oven at 325 until nicely brown. Make meringue with sugar, eggs and salt. Fold in nuts. Melt butter in cookie sheet with sides. Drop meringue mixture in butter by spoonful and bake at 325 for 25 to 30 minutes, turning every 8-10 minutes until butter is absorbed and meringue is slightly brown. Remove from pan and break into whatever size pieces you want.

  4. RAISED POTATO DONUTS (makes 100 donuts!)

    1 cup warm water
    2 Tb. Dry yeast (pkgs) dissolved in the 1 cup of warm water
    1 cup shortening
    6 eggs, beaten
    4 tsp salt
    3 cups milk
    1 cup sugar
    2 cups mashed potatoes (or instant)
    2 tsp. lemon juice
    2 tsp. grated lemon rind
    ½ tsp. nutmeg
    12-13 cups flour

    Instructions
    Combine milk, shortening, salt, sugar, mashed potatoes and heat to lukewarm. Add beaten eggs and yeast. Add 6 cups flour and beat until well blended and smooth. Add lemon juice, rind and nutmeg. Add flour to make soft, but firm dough (firm enough to roll.) Knead until smooth. Cover and let rise until double in bulk (approximately 1 hour.) Punch down and divide dough in half. Roll out 1.2 inch thick and cut with cutter. Cover and allow to rise until double (30-40 minutes.) Fry in deep fat oil and 375 degrees until golden on both sides. Drain on paper towel and dip in prepared glaze, sugar, or chocolate. Use chopsticks to turn.


    Toppings
    Glaze (Thin)
    1 ½ cups powdered sugar
    1/4 cup warm water (1 tablespoon at a time)
    1 tsp vanilla
    1/4 tsp. cream of tartar
    1 Tb. Karo syrup

    Put in bowl. Dip completely. Drip on rack.

    Sugar
    Put sugar in brown bag. Cool donut first. Then drop in and shake.

    Chocolate (Thick)
    1 ½ cups powdered sugar
    1 Tb. warm water or more
    2-3 tsp. cocoa
    1 tsp. vanilla
    1/4 tsp. cream of tartar
    1 Tb. Karo syrup
    Dip top only.
    Optional - add sprinkles.

  5. hearty bacon potato chowder

    8 slices cooked bacon- cut into 1 inch pieces
    2 cup cubed potatoes (red or brown which ever you like)
    1/2 an onion
    1 cup (8 oz) sour cream
    1 can cream of chicken
    8 oz can of whole corn -drained
    1/4 tsp pepper
    1/4 tsp thyme
    put bacon , onion and potatoes in pot . add just enough water to cover them. boil for 10 to 15 minutes then add remaining ingredients. simmer until potaoes are soft

  7. Chocolate Cake In 5 Minutes!

    Ingredients:
    4 Tablespoons cake flour
    4 Tablespoons sugar
    2 Tablespoons cocoa
    1 Egg
    3 Tablespoons milk
    3 Tablespoons oil
    1 Mug
    Instructions:
    Mix flour, sugar and cocoa:
    Spoon in 1 egg
    Pour in milk and oil, and mix well
    Put in microwave for 3 minutes on maximum power (1000watt)
    Wait until it stops rising and sets in the mug
    Tip contents out of mug onto saucer and enjoy!

  8. Warm Your Tummy Chile

    2 cans Bush's chile Beans
    1/2 lb. Ground Beef
    1/2 Medium Onion
    1 14.8 oz can Petite Diced Tomatoes
    1 or 2 (depending on how spicy you want it)
    Jalapenos or Serrano peppers chopped
    small
    2 Tbsp Sugar
    1/4 cup Apple Cider Vinegar
    Salt and Pepper to taste

    Brown ground beef, cooking onion with it. Combine all ingredients in a crock pot for 3 hours on high. Is great with a sweet cornbread.
